Tamarind duxelle crust, parmesan risotto al salto, charcoal-grilled tomato and broccolini, demi-glace

Moqueca sauce, smoked paçoca (peanut crumble), chilli oil, grilled shrimp and cheiro pepper

Rich and bold. Buttery cocoa cake, dark chocolate ganache, hazelnut ganache and cocoa tuile

Slow-cooked beef hump with roasted onion and pickled collard greens

The chef
Ricardo Silva works charcoal, smoke and Brazilian ingredients into signature dishes. A graduate of the Mausi Sebess Culinary Arts Institute (Buenos Aires), he helped create Carvão — recognized by Exame Magazine and the Veja Comer & Beber guide — and the PI.ZZA brand. He prefers to simply call himself a cook.
